Injector TR-850 XLT

This process is one of the most important and successful methods in increasing yield in the food industry. Traust Know How has installed many new factories in Iceland and abroad based on the "Fish in Fish".

Injection Process

The system uses the trimmings of fresh fish to make a suspension of trim, brine and a binder. The solution is injected with the TR 850 XLT Injector into the fillet. The result is an increase in the weight of the product as a result of better raw material utilization. The trim will be blended and reduced into micron size particles that remain inside the product along with the water and binder.

Even though the product is cooked later on the shrinkage will be less than when not treated. The system is easy to run and operate. By programming the machine on-screen, the supervisor can set the best injection timing, pressure and speed for each product. The injector will leave no visible sign of injection on the product.

Updated Capabilities

The new injecting machine is capable of injecting brine into fish while protecting the fish during injection. In the new version there are 968 needles floating or fixed. It also comes with an on-board crane that makes it easier to clean or service the needle head.

The average gain associated with the TR-850 XLT is about 10-30% or better yield. In other words, the producer has a 10-30% more product to sell. The increased rate of return is almost the same as the percentage change in yield and the change in variable cost of production is negiligible .
